I can recommend a good bike shop in Tottori-shi, and one in Yonago. The Yonago one I can't remember the name of, but it's located just past the western end of the shopping arcade. I know of no good trails in the area, however. I highly recommend going roadie, though, as there are plenty of scenic miles of asphalt. I have no idea where rentals are available for anything beyond a mamachari.
